Christmas is a time of gioia, sharing and… unfortunately, also of food waste. But with a little bit of creativity e planningit is possible to prepare a holiday menu delightful and at the same time sustainable.

Here are 5 anti-waste recipes that will allow you to amaze your loved ones and do good for yourself planet.

1. Cream of potato and carrot peels

Don’t throw away the peels of the potatoes and carrots you will use for Christmas lunch! Wash them well, boil them in salted water and blend them with a drizzle of oil to obtain a velvety warm and comforting.

Serve with stale bread croutons and a sprinkling of grated cheese.

2. Meatballs made from leftover meat and vegetables

You cooked too much roast or too many side dishes? Chop them finely together with an egg, parmesan, breadcrumbs and spices to taste.

Shape of meatballsdip them in flour and fry them in boiling oil. Excellent served with a yogurt sauce!

3. Leftover pasta savory pie

If you have some boiled pasta left over, use it to line one buttered baking tray. Stuff with cheese, cured meats, sautéed vegetables or other leftovers of your choice.

Cover with more dough, brush with a beaten egg and bake at 180°C for 30 minutes. A savory cake delicious and anti-waste!

4. Sweet panettone and dried fruit crumble

The leftover panettone becomes the perfect base for a crumble with a Christmas flavour. Crumble it coarsely and combine it with chopped dried fruit, sugar, cinnamon and butter flakes.

Sprinkle the mixture over diced apples or pears and bake in the oven for 40 minutes. A dessert warm and fragrant!

5. Hot chocolate with recycled pandoro

Finely chop the stale pandorocombine bitter cocoa, sugar and a pinch of salt. Heat the milk with a vanilla pod, then pour it over the pandoro mixture and mix vigorously.

Serve yours hot chocolate creamy with a sprinkling of cinnamon.
